Chili Spaghetti Pie Recipe

From Donna-Marie Pye's "300 Slow Cooker Favourites". Spaghetti pie originated as a creative use for leftover cooked spaghetti. This pie combines two family favourites- spaghetti and chili.

Recipe Ingredients for Chili Spaghetti Pie


Crust:
8 oz dried spaghetti
1 large egg, lightly beaten
1/4 cup butter, melted
1/3 cup freshly grated Parmesan cheese
1 tsp chili powder

Filling:
1 lb lean ground beef
1 large onion, finely chopped
398 ml baked beans in tomato sauce
540 ml Italian-style stewed tomatoes, with juices
1 tsp chili powder
1/2 tsp freshly ground black pepper
2 cups shredded Monterey Jack cheese, divided

Recipe Directions for Chili Spaghetti Pie

  1. Crust: In a pot of boiling salted water, cook spaghetti according to package directions. Drain and rinse well under cold water.

  2. In a large bowl, combine egg, melted butter, Parmesan and chili powder. Add cooked spaghetti and toss to coat. Spoon into lightly greased slow cooker stoneware, pushing mixture slightly up sides.

  3. Filling: In a large nonstick skilet, over medium-high heat, cook ground beef and onion, breaking up meat with back of a spoon, until meat is no longer pink. Drain off any fat. Add beans, tomatoes, chili powder and pepper. Cook, stirring, for 2 minutes, or until thoroughly heated. Stir in 1 cup Monterey Jack cheese. Spoon meat/bean mixture into spaghetti-lined stoneware.

  4. Cover and cook on Low for 4 to 6 hours, or until hot and bubbling.

  5. Sprinkle remaining Monterey Jack cheese over top of pie. Cover and cook on High for 20 to 30 minutes longer, or until cheese melts.
