A mexican take on salmon with a yummy side of roasted peppers, onions, and corn!

Recipe Ingredients for Chili Roasted Salmon

4 tbsp lime juice
4 garlic cloves
2 tsp chili powder
2 tsp ground cumin
3 tsp extra virgin olive oil
1.31 pounds Fish, Salmon, Atlantic, Farmed
1 1/2 cups frozen corn
1 red bell pepper
1 poblano pepper
1/2 small red onion

Recipe Directions for Chili Roasted Salmon

  1. Preheat oven to 425 degrees.

  2. Mist 2 large baking with cooking spray.

  3. In a small bowl mix together 2 tbsp lime juice with garlic, chili powder, cumin, and 1 tsp olive oil.

  4. Add salmon and turn to coat.

  5. In a medium bowl, toss corn, bell pepper, poblano pepper, and onion with remaining 2 tsp of olive oil.

  6. Transfer corn mixture to one of the baking sheets; spread into a single layer.

  7. Remove salmon from marinade and arrange on second baking sheet.

  8. Drizzle corn mixture with remaining slaon marinade.

  9. Season slamon and corn with salt and black pepper to taste and roast 8 to 10 minutes until fish is just cooked through and vegetables are tender.

  10. Mix together 1/3 cup of sour cream, remaining lime juice and 2 tbsp chopped cilantro for an optional sauce to drizzle over the top.
