Mexican Chili Rellenos Casserole. Easy to make.

Recipe Ingredients for Chili Rellenos Casserole

1 cup skim milk
2 eggs, whole
1/3 cup flour
12 oz green chilis, whole
4 oz shredded monterey jack cheese
4 oz shredded cheddar cheese
8 oz tomato sauce

Recipe Directions for Chili Rellenos Casserole

  1. Beat skim milk with eggs and flour until smooth. Split open chiles, rinse out seeds and drain on paper towels. Mix cheeses or use mexican cheese blend. Reserve 1/2 cup for topping.

  2. Make alternate layers of remaining cheese, chilies and egg mixture in deep 1.5 quart casserole dish. Pour tomato sauce over top and sprinkle with reserved cheese.

  3. Bake in 375 degree oven 1 hour or until cooked in center.
