Makes 8 servings



Prep Time 20 minutes, cooking time about 45 minutes. Use whole chiles. Cube the monterey jack cheese, and shred the cheddar cheese. The calorie counter uses 2% milk. Use 1% or non-fat milk for less calories/fat. I don't recommend low-fat cheese as it doesn't melt as well.

Recipe Ingredients for Chili Relleno Casserol

28 oz green chiles
4 oz salsa
16 oz monterey jack cheese
6 eggs
1/2 cup flour
1/2 cup milk
1/2 tsp baking powder
1/2 tsp salt
4 oz cheddar cheese

Recipe Directions for Chili Relleno Casserol

Spray a 9X13 inch baking dish with PAM. Place chilis in baking dish and spread Monterey Jack cheese over tehm. Beat eggs well and add flour, baking powder, salt and milk. Pour evenly over top of chilis and Jack cheese. Spread salsa over that and then top with the shredded cheddar cheese. Bake (uncovered) 35 to 45 minutes in 350 degree oven.
