Recipe Ingredients for Chili

1 tbsp. olive oil
1 lb. boneless, skinless chicken breast
43 1/2 oz. diced tomatoes
16 oz. light red kidney beans
1 medium onion
3 tbsp. chili powder
1 tsp. salt
1/2 tsp. pepper
2 cups water (or until desired consistency)
1 cups shredded cheddar cheese
3 cups dry macaroni noodles

Recipe Directions for Chili

  1. Heat the oil in a skillet over medium heat, and cook the chicken 10 minutes, or until juices run clear.

  2. Transfer chicken to a large pot over medium heat. Pour the tomatoes and water into the pot. Mix in onions. Season with chili powder, salt, and pepper. Cook 25 minutes, stirring occasionally. Mix in kidney beans and continue cooking 10 minutes, or until heated through.

  3. Add noodles and cook another 45 minutes, or until noodles are to desired consistency.
