Homemade chili, mild and low salt For lower salt use low sodium canned diced tomatoes and dried kidney beans that have been soaked overnight.

Recipe Ingredients for Chili

30 ml extra virgin olive oil
450 grams lean ground beef
65 ml chili powder
2 large red bell peppers, diced
2 large green bell peppers, diced
2 medium yellow onions, diced
730 ml canned diced tomatoes
2000 ml tomato puree, home canned with seeds and skin removed
730 ml canned red kidney beans, drained

Recipe Directions for Chili

  1. Saute the beef in the olive oil in a large heavy-bottomed pot. Add the chili powder and saute until fragrant.

  2. Drain excess fat if necessary. Add the vegetables and saute.

  3. Add the tomatoes and tomato puree and bring to a simmer.

  4. Add the drained beans and simmer until thickened, about 2 hours.

  5. Serve with steamed brown rice and chopped cilantro.

  6. Freezes well.
