Red kidney bean and venison chili with mushrooms

Recipe Ingredients for Chili

1 1/2 cups dry red kidney beans
4 cups water
2 cup hunts tomato sauce
3 stalks celery
1 medium onion
4 mushrooms
3 tbsp chili powder
1/4 tsp salt
2/3 lb ground venison
1 tbsp lard (bacon fat)

Recipe Directions for Chili

  1. Soak beans in 4 cups water about 3 hours. Change water and bring to boil. Reduce heat and simmer 1 1/2 hours. Drain and refrigerate until ready to use. (I do this the day before)

  2. In cast iron pan, brown venison in bacon fat (current batch of venison is as near to fat free as I've ever seen, bacon fat not necessary if using any other meat) Transfer to stew pot.

  3. Add beans and tomato sauce to pot and begin cooking over low heat.

  4. Chop vegetables and mushrooms. Deglaze skillet with a little water or red wine, cook vegetables until soft then add to stew pot.

  5. Add black pepper, salt, and chili powder. Simmer covered about an hour.
