Beef and bean chili. Makes LOTS!

Recipe Ingredients for Chili

1 lb lean ground beef
3 cups sweet potatoes, chopped
1 large onion
5 cloves garlic
1 tbs grapeseed oil
4 cups pinto beans
56 oz tomatoes
3/10 cups adobo sauce
3 cups mushrooms, raw
2 cups corn
1/2 cup cilantro, chopped
1 tbs cumin
1 tbs salt
2 tbs lemon juice
1 tbsp pepper
3 tbsp tomato paste

Recipe Directions for Chili

  1. cook beef in oil.

  2. add onion, mushroom, sweet potato, cumin and garlic.

  3. When tender, add tomatoes and beans.

  4. Simmer 20 minutes.

  5. Add salt, lemon juice, pepper, and cilantro just before serving.
