Lots of chili for the calorie count! Great for lunches. Most of the ingredients were bought at Trader Joes.

Recipe Ingredients for Chili

2 portions ground beef, (1lb raw), 96% lean, 4% fat
4 g basil, chopped, frozen
4 g garlic, crushed, frozen
5 oz carrots, chopped
5 oz celery, chopped
5 oz onions, chopped
1/4 cup corn, frozen, roasted
1/4 cup peppers, frozen, mixed
24 oz tomato juice
20 oz fresh mild salsa, Trader Joes
4 oz green chilis, mild, canned, diced, fire roasted
12 oz pinto beans, canned, drained and rinsed
1/5 tsp ground cayenne pepper
1/4 tsp dried oregano
1/4 tsp ground black pepper
1/2 tsp salt
1 tsp ground cumin

Recipe Directions for Chili

  1. Cook beef in a big pot until almost browned.

  2. Add frozen garlic and basil, carrots, celery, onion, corn and peppers.

  3. Cook until beef is browned and all frozen ingredients are de-thawed and have started to fry.

  4. Add the rest of the ingredients.

  5. Bring to a boil and reduce heat to a simmer. Cook for another hour to an hour and a half, stirring every five to ten minutes.
