Seriously healthy vegetarian bean chili.

Recipe Ingredients for Chili

9 oz Black Beans, Canned
1 large yellow onion
2 red pepper
1 green pepper
1 zuchini
2 stalks celery
16 oz Tomatoes Diced No Salt Added
10 oz Tomatoes Diced with Green Chilies
16 oz Beans, Kidney, All Types, Mature Seeds, Canned
1 can light beer
2 tbs red wine vinegar
1 tbs olive oil
2 tsp garlic powder or fresh garlic
1 1/2 tbs chili powder
1 1/2 tsp cinnamon
1 1/2 tbs cumin
2 tsp coriander
2 tbs dried oregano
2 tsp black pepper
1 salt to taste

Recipe Directions for Chili

  1. Chop onion finely and add to large pot with one table spoon of olive oil over medium heat. After 3-4 minutes, add chopped green pepper. After 3-4 minutes more, add chopped zuchini.

  2. While this is cooking, chop red peppers and heat in microwave safe bowl for 1 1/2 minutes until soft. Chop celery stalks and cook using same method. In a blender, add red pepper and celery with the can of diced tomatoes (low sodium if possible) and the small can of tomatoes and green chilis. Blend until large pieces disappear.

  3. Open and drain/rinse the two can of beans. Add beans, garlic, and all spices to the now soft veggies in the pot and stir. Add blended tomatoes and peppers to the pot as well. Add the can of light beer and vinegar. Bring to a simmer (medium high heat). Simmer for 10 minutes. Use a potato masher to mash beans and veggies towards the bottom of the pot. Not everything will mash but it will help incorporate all the ingredients. If you want a thicker chili, mix a tbs each of flour and cornstarch in 1/4 cup cold water and add to the pot. Make sure to cook at least 2-3 minutes more so the flour and cornstarch cook fully. Serve over baked potatoes/sweet potatoes, whole grain pasta, rice, or enjoy all by itself.
