Recipe Ingredients for Chili Non Carne

1 tablespoon Olive Oil
1 cup of chopped onions
1/2 cup of chopped green peppers
1 teaspoon minced garlic
1 tablespoon chili powder
1 teaspoon cumin powder
16 ounces of canned tomatoes with juice
16 ounces of canned pinto beans
1/2 cup of Bulgur

Recipe Directions for Chili Non Carne

  1. Place the oil in a heavy 2-quart (or 3-quart) saucepan. Add the onions and peppers. Cook over medium heat for 10 minutes, or until the vegetables are tender but not brown. Stir in the garlic, chili powder and cumin; cook for 1 minute.

  2. Add the tomatoes (with juice) and water; bring the chili to a simmer. Cover the pan, reduce the heat to low and cook, stirring occasionally, for 1 hour.

  3. Add the beans and bulgur. Cover and cook for 30 minutes, or until the bulgur is cooked through and the vegetables are tender. Add salt to taste. Serve hot.
