Chili w/2 beans and lean ground beef, green chilis and assorted veggies

Recipe Ingredients for Chili (Mom's recipe)

2 pounds ground beef, lean, 10% fat
1 large onion, finely chopped
2 stalks celery, finely chopped
1/4 cup bell peppers, green, diced
1 large carrot, grated
6 cloves garlic, minced
28 ounce tomato, crushed
24 ounce peppers, chile, green, diced
14 ounce beef broth
45 ounce pinto beans or pinquitos
1/4 tsp oregano
1/4 tsp cumin
3 tbsp chili powder
1/4 cup red wine

Recipe Directions for Chili (Mom's recipe)

  1. Crumble and brown ground beef (I recommend ground sirloin if possible, there's more quality control. Sprinkle with any type of salt/spice/meat tenderizer. Strain meat over sink to get rid of fat, pat with paper towel.

  2. In large pot saute celery, onion, bell peppers and cumin. Add garlic and grated carrot last, just enough to soften but not turn garlic bitter. Add ground beef, tomato, beef broth, beans, green chiles, oregano, chili powder and red wine. If too thick, add more beef broth; add beans to expand recipe.

  3. Simmer for 30 minutes over low heat, stirring every 10-15 minutes so bottom doesn't burn.
