Adapted from "Mini Meat Loaves" in "The Good Housekeeping Illustrated Children's Cookbook".

Recipe Ingredients for Chili Meatloaf

2 lbs beef, ground 80% lean meat/ 20% fat
2 large eggs
1 cup plain bread crumbs
1 medium yellow onion, diced
1/2 cup shredded carrots
1 cup chili sauce
1/2 tsp salt
1/2 tsp pepper
1 tbl chili powder

Recipe Directions for Chili Meatloaf

  1. Mix all ingredients together.

  2. Form into loaf on baking pan lined with foil.

  3. Bake at 375 for about 60 minutes.
