Recipe Ingredients for Chili Lime Chicken Soup w/Rice

12 cups of water
3 chicken breast, meat only (boiled)
1 cup of brown rice
2 cups of carrots, sliced thin
1/2 cup of onion, large slices
5 cloves of garlic
4 jalapeno peppers, raw
3 tbsp lime juice
3 tbsp lime juice
1/2 head of cabbage
1 cup chopped coriander (cilantro)
2 avocados
1 tbsp salt
1 tsp pepper

Recipe Directions for Chili Lime Chicken Soup w/Rice

  1. Boil chicken breasts in water for 30 minutes with onions, garlic (slightly crushed), 2 jalapeno peppers, 2 sprigs of cilantro, 4 round slices of lime, and salt & pepper.

  2. Remove from heat and strain broth into a large bowl (removing chicken, onions, garlic, lime slices, & cilantro.) Shred the chicken. Return strained chicken broth and shredded chicken to pot. Add brown rice, carrots, 2 jalapeno peppers, and juice of one lime and boil until rice is tender (about 15-20 minutes.)

  3. Serve in large bowls garnished with fresh chopped cabbage, avocado, and cilantro.
