Beef and bean chili with veggies for extra fiber and vitamins!

Recipe Ingredients for Chili with extra veggies

1 1/2 lb sirloin, ground
2 tsp olive oil
1 c onion
1 c red bell pepper
1 carrot, grated
1 zuchini, grated
1 yellow squash, grated
2 tsp chili powder
1 tsp cumin
1 tsp oregano
3 garlic cloves
4 1/2 oz green chiles
2/3 c barley, quick cooking
1/4 c water
15 oz. can black beans
29 oz. can tomatoes
15 oz. broth
3 tbsp cilantro

Recipe Directions for Chili with extra veggies

  1. Brown beef and set aside to drain.

  2. Add oil to pan, heat for 30 secs. Add garlic; saute 30 secs.

  3. Add veggies and saute gently until tender.

  4. Add meat and the rest of the ingredients, except cilantro, simmer 20 min.

  5. Add cilantro and serve.
