Cornbread and Chili cooked together in a cast iron skillet

Recipe Ingredients for Chili Cornbread Skillet

1 lb ground beef
15 ounce chili beans, undrained
3/4 tbsp chili powder
3/4 tbsp paprika
3/4 tbsp ground red pepper
1 garlic clove, pressed
17 ounces corn muffin mix
1 cup shredded sharp cheddar cheese
1/2 cup water
3 eggs

Recipe Directions for Chili Cornbread Skillet

  1. Preheat oven to 350. Cook and stir ground beef in a 12 inch skillet over medium heat for 8 - 10 minutes or until no longer pink; drain if necessary. In medium bowl, combine turkey, chili beans, 1 tbsp of seasoning mix and pressed garlic.

  2. Carefully spoon mixture back into skillet.

  3. In another medium bowl, combine muffin mixes, remaining seasonings and half of the cheese; mix well. Add water and eggs; mix well. Pour batter evenly over meat mixture. Bake, uncovered, 30 - 35 minutes or until toothpick inserted in center comes out clean.

  4. Using oven mitts, carefully remove skillet from oven. Loosen edges of cornbread from skillet. Carefully invert cornbread onto large, heat safe serving plate. Sprinkle with remaining cheese. Cut into wedges and serve.
