Chili Con Pavo (Turkey) -or- Chili Con Carne (Beef) Recipe

Makes 10 servings



Heat olive oil in a heavy covered oven proof pot. Add flour and cook for 5 minutes to make a roux. Saute finely chopped onion, celery, pepper in the roux till soft. Saute peeled garlic till soft and crush into the roux, Add meat and saute till it loses color, adding more oil if necessary (you can just skim off any excess oil later). Add chili powder and any seasonings (i.e., red pepper, oregano, bay leaf) as you like. Add tomatoes and water (or vegetable stock) and stir well. Cover the pot and put in a 300 degree oven for 3-4 hours. Meanwhile cook barley and lentils in covered pot, over medium heat till tender (30 minutes or so) add frozen peas in the last 10 minutes of cooking. Plate: Mound barley/lentils/peas in center of bowl. Ladle chili over top. Garnish if you like with a dollop of sour cream or plain yogurt.

2 lbs ground turkey
28 oz tomatoes
3 tbsp olive oil
3 tbsp flour
12 oz onion
12 oz celery

1 quart water
8 oz barley
8 oz lentils
80 oz spinach
