Great source of protein and fibre - the extra lean beef cuts down the fat substantially. My family has always added potatoes to chili - it's a delicious addition!

Recipe Ingredients for Chili Con Carne

2 lb extra lean ground beef
2 large onions
1 tbsp vegetable oil
28 oz kidney beans
20 oz tomato soup
1 1/3 cup water
2 tsp salt
2 tsp chili powder
1 tsp white vinegar
6 medium potatoes

Recipe Directions for Chili Con Carne

  1. Brown beef and onion in fat - drain

  2. Add remaining ingredients

  3. Simmer, stirring occasionally for 10 - 15min or until desired consistency is obtained

  4. You can also prepare this in a crockpot - I still brown the beef first, but the flavours blend better in a crockpot especially if you let it simmer in the crockpot for a day.
