Recipe Ingredients for Chili con Carne

1 tbsp salad oil
2 pounds lean ground beef
1 cup onions, coarsely chopped
1/4 cup green pepper, diced
2 garlic cloves, minced
32 ounce tomatoes
1/3 cup chili powder
1 tsp salt
32 ounce red kidney beans

Recipe Directions for Chili con Carne

  1. In 5-quart Dutch oven over medium-high heat, in hot salad oil, cook ground beef, onions, green pepper and garlic until onion is tender, about 10 minutes, stirring frequently.

  2. Add tomatoes and their liquid (can also substitute with 4 cups fresh chopped tomato), chili powder and salt; heat to boiling. Reduce heat to low; cover and simmer 1 hour, stirring occassionally.

  3. Stir in beans and their liquid (can also substitute for 2 16-ounce cans pinto beans); heat. Serve in soup bowls with choice of accompaniments.

  5. Shredded Mild Cheddar or Monterey Jack cheese, shredded iceberg lettuce, diced avacados, minced onions, chopped green pepper, chunks of French bread, saltine crackers, hot Corn Tortillas, tortilla or corn chips.
