This is the closest I've ever come to making my dad's perfect chili. Enjoy with a dab of sour cream, a sprinkle of shredded cheese, and lots of corn chips.

Recipe Ingredients for Chili - The Classic

150 2 small cooking onions onion
2 tbsp coconut oil
2 tsp minced garlic
30 g jalapeno, minced
166 g green bell pepper
218 g orange bell pepper
2 2/5 lb 80/20 ground beef (1/2 beef/pork/veal mix)
15 1/2 oz black beans
15 1/2 oz red kidney beans, no salt added
14 1/2 oz diced tomatoes, no salt added
8 oz tomato paste
15 oz tomato sauce
2 oz chicken stock, no salt added
3 tbsp Worcestershire sauce, reduced sodium
2 tbsp Ideal sweetener
4 tbsp chili powder
1 tbsp cumin
1 tsp dried basil
2 tbsp black pepper
1 tsp cinnamon
1 tsp allspice
1 tsp cayenne pepper

Recipe Directions for Chili - The Classic

  1. Saute onions in coconut oil. Add garlic.

  2. Brown meat.

  3. Add 1/2 of all seasonings into meat and stir.

  4. When meat is just browned, add beans, tomato products, Worcestershire sauce, chicken stock, and sweetener.

  5. Add bell peppers and remaining seasonings and stir.

  6. Leave on very low heat for at least 2 hours. Simmer, stirring occasionally.
