A light and spicy tasting dish that goes wonderfully over a small bed of rice.

Recipe Ingredients for Chili Chicken

12 oz boneless skinless chicken breasts (aprox 3 pieces)
1/2 tsp salt
1 egg white, lightly beaten
2 tbsp cornstarch
4 tbsp vegetable oil
2 garlic cloves, crushed
1 1/2 oz fresh ginger root, grated (aprox 1/2 inch piece)
1 red bell pepper, seeded and diced
1 green bell pepper, seeded and diced
3/4 oz fresh chillies, chopped (aprox 2)
2 tbsp light soy sauce light
1 tbsp red wine vinegar or chinese rice wine or dry sherry
1 tbsp balsamic vinegar

Recipe Directions for Chili Chicken

  1. Cut the chicken into cubes and place in a mixing bowl. Add the salt, egg white, cornstarch and 1 tbsp of the oil. Turn the chicken in the mixture to coat thoroughly.

  2. Heat the remaining oil in a preheated wok. Add the garlic and ginger. Stir-fry for 30 seconds.

  3. Add the chicken pieces to the wok and stir-fry for 2-3 minutes, or until browned.

  4. Stir in the bell peppers, chilies, soy sauce, rice wine, and balsamic vinegar and cook for a further 2-3 minutes, until the chicken is cooked through. Transfer to a warm serving dish and serve.
