Chili Cheese Chicken Recipe

Can easily substitute 1/2 the cheese with fat free and not notice the difference. I like this also to serve over pasta.

Recipe Ingredients for Chili Cheese Chicken

3 tbls olive oil
1 1/2 tsp chili powder
1 1/2 tsp ground cumin
1/4 tsp cayenne
1 1/2 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
2 lbs boneless chicken breast, skinless
6 tbls onion, finely chopped
2 medium tomatoes, seeded and finely chopped
1 cup cheddar cheese, shredded

Recipe Directions for Chili Cheese Chicken

  1. Combine oil, spices, salt and pepper in a ziploc bag and shake until blended.

  2. Add chicken pieces and marinate between 30 minutes and overnight.

  3. Preheat oven to 400F. Line a baking sheet with foil and arrange chicken pieces on the sheet.

  4. Top with onion and tomato.

  5. Bake uncovered 20 minutes or until no longer pink. Usually around 165 - 170 internal temp.

  6. Remove from oven and sprinkle evenly with cheese and bake 3 more minutes or until cheese melts.

  7. Transfer to serving dish and drizzle pan juices all over.
