Recipe Ingredients for Chili with Black Beans

32 oz Beef, Chuck, Blade Roast
2 oz Extra Virgin Olive Oil
2 medium (2-1/2" dia) Onions
8 serving Tomatoes, Crushed, Canned
1.5 cup Mild Diced Tomatoes and Green Chilies
2 cup Black Beans
8 tbsp Chili Powder
9 tsp Cumin
1 tbsp Minced Garlic

Recipe Directions for Chili with Black Beans

  1. Cut roast into bite-sized pieces, discarding fat.

  2. Brown meat in oil.

  3. Add onions and garlic. Saute' until onions are clear.

  4. Add tomatoes, seasonings and enough water to cover meat.

  5. Simmer, covered, for 2-3 hours, till meat is tender.

  6. Rinse black beans, and add just before serving.

  7. Continue to simmer, long enough to heat beans.

  8. Serve with Cheese, & Crackers or Cornbread.
