Chili is slightly more than medium hot. Adjust spices to your own compression ratio. I've used jalapeno peppers in the past but didn't care for the flavor change. You can also change up your choice of beans. This is a very versatile recipe so feel free to experiment.

Recipe Ingredients for Chili Beef Stew

24 oz 85% Lean Ground Beef, Fresh
7 oz Green Chiles
28 oz Diced Tomatoes
15 oz Beans, Kidney, Red, Mature Seeds, Canned
15 oz Beans, Pinto, Mature Seeds, Canned
15 oz Black Beans, Organic
15 oz Chickpeas (Garbanzo Beans, Bengal Gram), Mature Seeds, Canned
15 oz Corn, Sweet, Yellow
1 cup, chopped Onions
3 tsp Chili Powder
1 tsp Pepper, Red Or Cayenne
0.5 oz Ground Cumin

Recipe Directions for Chili Beef Stew

  1. Brown ground beef with chopped onion in a dutch oven or large pot. Add spices when onion is soft. Add tomatoes and green chiles when beef is no longer pink.

  2. Drain cans of beans and corn before adding to the pot. Simmer for at least 30 minutes before serving. Leftovers freeze well. Recipe can also be assembled and placed in a 6 quart slow cooker on low for 8-10 hours. Serve plain or add raw chopped onions, shredded cheese, and sour cream.
