A hearty beef dish great served over brown rice or alongside whole wheat tortillas. Very filling and high in protein.

Recipe Ingredients for Chili-Beef Salsa

16 oz Beef, Chuck, Arm Pot Roast
2 cup Sauce, Ready-to-serve, Salsa
6 tsp packed Sugars, Brown
1 tbsp Pepper, Red Or Cayenne
2 fruit (2" dia) Limes
0.5 cup Coriander Leaves
3 1tsp Olive Oil
0.5 cup (8 fl oz) Water
1 medium (2-1/2" dia) Onions
1 clove Garlic

Recipe Directions for Chili-Beef Salsa

  1. Cut beef into bite-size, stew pieces and brown in 2 T of olive oil in a large pot on high heat.

  2. Chop onions and mince garlic, add to pot and cook until onions are clear and garlic is fragrant.

  3. Add salsa and stir well.

  4. Add brown sugar and hot pepper to taste (chipotle pepper also works well).

  5. Add some water (about 1/2 C) and simmer, covered, for one hour.

  6. Squeeze the juice of two limes into pot. Check tenderness of meat and simmer an additional 30 min to 1 hr or until meat is cooked through and tender. Add water if moisture is necessary.

  7. Chop cilantro and sprinkle over finished stew.
