Spicy -- mostly a rich, semi-thick stock. Excellent served with cornbread, rice, over Fritos and cheese, or go the full Monty and cook a 4-5lb brisket on the BBQ (wrapped in foil), and then chop & shred it into this soup for a great campfire chili.

Recipe Ingredients for Chili Beans

1 1/4 c pinto beans
10 c water
7 oz bacon
16 oz fat free refried beans
4 oz onion
5 T chili powder
1/2 t cumin
1/2 t oregano
1/2 t garlic powder
30 oz Rotel tomatoes
2 t salt

Recipe Directions for Chili Beans

  1. Soak the pintos overnight, rinse.

  2. Finely mince the onion and 2 cloves of garlic and set aside. (the recipe calls for garlic powder, but real fresh garlic is a plus.)

  3. Put water and beans in an 8qt soup pot and bring it to a boil. Snip the bacon into 1/2" pieces and add to pot with onion and garlic. Add 4T of the chili powder, plus cumin and Mexican Oregano (different from the European oregano that is used in Italian food -- you can find it at Penzeys.com)

  4. Bring to a brisk boil and cover. Cook for 3+ hours.

  5. Using warm beef stock or water, thin the refried beans and add to soup pot. (another good choice is to use dehydrated pinto bean flakes from Frontier Coop, or white or black bean flour from Bobs Red Mill -- both are online.) This ingredient -- regardless of which form you use, add fiber and thickening to the soup.)

  6. Add more chili powder if needed for a rich, strong flavor, and add salt to taste.

  7. Add Rotel tomatoes -- 1 large can of the mild or spicy chopped tomatoes & green chilis.

  8. Return soup to a slow boil and allow to simmer, covered for another 45 minutes.
