From Flavours by Donna Hay. This is without the pancetta, and using a vegetarian stock. Recipe calls for beef stock or vegetable stock.

Recipe Ingredients for Chili Baked Beans

250 grams Lima Beans
1 tbsp Olive Oil
3 pepper Peppers, Hot Chili, Red
2 medium (2-1/2" dia) Onions
2 clove Garlic
880 grams Tomatoes, Red, Ripe
2 cup (8 fl oz) Water
0.25 cup Parsley
1 lemon yields Lemon Juice
1 tbsp Sage, Ground
4 serving Vegetarian chicken-like seasoning
1 tsp Salt, Table

Recipe Directions for Chili Baked Beans

  1. onions, sage, and garlic (and pancetta if using) and cook fora 3 minutes or until soft.

  2. Add the tomatoes, stock, and the drained beans. Place in the oven and bake, covered, for one hour. Stir through the parsley, lemon juice, salt and pepper and serve.
