Chiles Rellenos Quiche (Serves 8.) Also good with refried beans as a side.

Recipe Ingredients for Chiles Rellenos Quiche

8 oz Green Chilies
1/2 lb monterey jack cheese
1/2 lb chedder cheese
4 eggs
1/3 cup flour
1 2/3 cup half and half milk
1 tsp salt
1/2 cup Salsa

Recipe Directions for Chiles Rellenos Quiche

  1. Rinse chiles & pat dry.

  2. Spread over bottom of oiled 8x10" casserole.

  3. Cover with cheese.

  4. Beat milk, flour, egg, and salt together.

  5. Pour evenly over the chile/cheese mix.

  6. Sprinkle salsa and diced chilis over the top.

  7. Bake at 375 degrees for 45 minutes. The mixture will puff up like an omelet.

  8. Let cool for 10 minutes and slice.
