Chiles stuffed w/refried beans/rice

Recipe Ingredients for Chiles

4 pepper poblano chiles
16 ounce Refried Pinto Beans, Organic
1 cup cheddar cheese, shredded
1/4 c brown rice (uncooked)
8 tbsp greek yogurt
4 tbsp picante sauce

Recipe Directions for Chiles

  1. 1. Place chile halves, cut sides up, on a round microwave-safe plate. Cover with wax paper; microwave at HIGH 3 minutes (OR until soft-- some peppers are insanely thick.)

  2. 2. While chiles cook, combine cooked beans and rice in a medium bowl, stirring well. Spoon bean mixture evenly into chile halves. Sprinkle each half with 2 tablespoons cheese, and cook in oven until cheese melted and insides warmed.

  3. 3. Add greek yogurt (smooth over top of each pepper half) and picante sauce.
