1650kc I like my Chile Verde somewhat spicy, although I've been told I like my food "white boy spicy", so if really hot is your thing, you probably want 8 jalapenos and if hot isn't your thing, try three.

Recipe Ingredients for Chile Verde

2 sliced in half and seeded pepper green chilies
6 jalapeno peppers (sliced in half and seeded)
1 green bell pepper (sliced in half and seeded)
8 tomatillos (husked and washed)
1 tablespoon olive oil
20 oz pork (loin, cubed)
1 tablespoon olive oil
1 onion (chopped)
4 cloves garlic (chopped)
1 teaspoon cumin
2 cup chicken stock
1 teaspoon oregano
1/2 cup cilantro (chopped)
1 1/2 cup Rice, White, Long-grain, Regular, Cooked

Recipe Directions for Chile Verde

  1. Broil the peppers and tomatillos until the peppers are blackened, about 10 minutes.

  2. Remove the skin from the peppers.

  3. Puree the peppers and tomatillos in a food processor.

  4. Heat the oil in a pan.

  5. Add the pork and brown.

  6. Set the pork aside.

  7. Heat the oil in the same pan.

  8. Add the onion and saute until translucent.

  9. Add the garlic and saute until fragrant.

  10. Add the cumin and saute until fragrant.

  11. Add the chicken stock, the pureed peppers and tomatillos, oregano, cilantro, salt and pepper.

  12. Simmer for 30 minutes.

  13. Serve over the cooked rice.
