Pork in a homemade chile verde sauce

Recipe Ingredients for Chile Verde

1 pound tomatillos
1 jalapeno pepper
1 onion, chopped
4 cloves garlic
2 tbsp olive oil
1 pound pork, diced
1/2 cup cilantro, chopped
1 tsp salt
1 tsp pepper
2 cups chicken stock, low sodium

Recipe Directions for Chile Verde

  1. Remove husk from tomatillos; Place tomatillo, jalapeno, onion and garlic in a roasting pan. Season with olive oil, salt and pepper. Stir to coat.

  2. Place in a 450 degree oven for 35 minutes or until slightly blackened.

  3. Dice 1 pound pork and season with salt, pepper and garlic. Brown pork.

  4. Remove tomatillos from oven when done. Place into a blender or food processor and puree.

  5. In a large pot, add pureed tomatillo and pork. Add enough chicken stock to cover pork. Bring to a boil. Reduce to a simmer and cook for about 1 hour. Add chopped cilantro. Serve
