Weight watchers friendly Chile Verde

Recipe Ingredients for Chile Verde

15 tomatillo
24 oz lean pork loin
14 oz diced green chile
1 tsp garlic
2 medium yellow onion
1 tbsp olive oil
1/4 tsp cumin

Recipe Directions for Chile Verde

  1. Roast the tomatillo's under a broiler until they begin to distegrate.

  2. Chop onion and saute in olive oil with garlic.

  3. Trim all fat from pork and cube.

  4. When the tomatillo's are done remove from the broiler and mash.

  5. Add tomatillo's to pot with onion.

  6. Add pork to pot.

  7. Simmer for 2 hours until pork is tender.
