Recipe Ingredients for Chile sin Carne

1 tablespoon cooking oil
1 medium onion
1 pound firm tofu
1 pound canned tomatoes
3/4 teaspoon salt
2 tablespoons chili powder
1 teaspoon oregano leaves
1/2 teaspoon ground cumin
1 clove garlic
1 pound canned kidney beans
2 green onions
1 small avocado
2 tablespoons lime juice

Recipe Directions for Chile sin Carne

  1. Heat oil in a 5- or 6-quart pan over medium-high heat; add onion and cook until soft. Add tofu and cook, stirring until tofu is crumbly and thoroughly heated. Add garlic.

  2. Stir in tomatoes (break up with a spoon) and their liquid, salt, chili powder, oregano, and cumin.

  3. In a blender or food processor, whirl a third of the beans until smooth, adding their liquid as needed; stir into tofu mixture. Then add remaining whole beans, along with any remaining liquid, to tofu. Simmer, uncovered, stirring occasionally, for 30 minutes.

  4. Meanwhile, cut green onions into thin slices. Pit, peel and slice avocado. Cut limes into eighths. Garnish with green onions, avocado, and lime wedges.
