Chile relleno with red bell peppers

Recipe Ingredients for Chile Relleno

2 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Peppers, Sweet, Red
0.17 cup Tempura Batter Mix
1/2 large Egg, Whole
3 dash Salt, Table
1 tbsp Olive Oil
1/2 cup reduced fat mexican cheese

Recipe Directions for Chile Relleno

  1. Broil red bell pepper until skin is blackened

  2. Peel off skin and stuff peppers with cheese

  3. Mix batter and dip peppers in

  4. Fry in hot oil until crispy

  5. Drain and serve
