Recipe Ingredients for Chile Relleno Casserole

1 1/4 cup egg beaters
2/3 cup mozzarella cheese, shredded
1 cup cheddar cheese, shredded
2 ounces pepper, chile, diced
1 tbsp flour
1 salt to taste
1 pepper to taste

Recipe Directions for Chile Relleno Casserole

  1. Spray 8" x 8" glass baking dish with non-stick cooking spray.

  2. Layer on the bottom of the dish 1/3 cup mozzarrela cheese and 2/3 cup cheddar cheese.

  3. On top of cheese, sprinkle chile peppers evenly.

  4. Put remaining cheese on top of chile peppers.

  5. In a bowl, combine egg beaters, flour, salt and pepper, mixing thoroughly.

  6. Slowly pour egg mixture over cheese in baking dish, making sure it's evenly covered.

  7. Bake at 350 degrees for about 45-50 minutes, or until the middle doesn't jiggle when shaken lightly.

  8. Let cool before cutting.
