Recipe Ingredients for Chile-Corn Custard Bake

3 1/2 tbsp vegetable oil, divided
2 c yellow onion, finely chopped
1/4 c all purpose flour
1/4 c cornmeal
1/2 tsp baking powder
1/4 tsp salt
1 large egg
2/3 c shredded Mexican blend cheese, divided
1/2 c low fat sour cream
1/2 c creamed corn
4 tbsp jalapeno chiles, seeded and minced

Recipe Directions for Chile-Corn Custard Bake

  1. Heat 1.5 tbsp oil in heavy skillet over medium-high heat. Add finely chopped onion and saute until soft and brown. Cool.

  2. Preheat oven to 350 degrees F. Spray 8 or 9 inch round metal pan with nonstick spray. Whisk flour, cornmeal, baking powder, and salt in small bowl. Whisk egg, 1/3 c cheese, sour cream, creamed corn and remaining 2 tbsp oil in large bowl. Add flour mixture; stir to blend. Stir in jalapeno and caramelized onion. Transfer batter to prepared pan. Sprinkle with remaining cheese.

  3. Bake until puffed and tester inserted into center comes out clean, about 35 minutes. Cool completely.
