Beef and Bean Chile from scratch. No powders, no tomatoes. Takes ~3.5 hrs to prepare and cook. 1 cup = 1 serving, approx.

Recipe Ingredients for Chile Colorado

2 1/2 pounds boneless beef chuck roast, trimmed of fat
16 oz (one can) Bush's Dark Red Kidney Beans
1 oz dried chile pods (about 9)
4 serrano peppers, diced
2 long red jalapeno peppers, diced
1 medium green bell pepper, chopped
1 large yellow onion, chopped
2 tablespoons olive oil
14 cloves (One head) garlic, minced
1/2 tablespoon kosher salt
1/2 tablespoon black pepper
1 cup Vegetable stock
1 1/2 cups water

Recipe Directions for Chile Colorado

  1. Cut off dried chile stems and remove seeds. Place dried chiles and 3 cups water into a medium saucepan, and bring to a boil. Remove from heat and steep for 30 minutes to soften. Strain into a bowl, reserving the cooking liquid.

  2. Place the soaked chiles and some of the liquid into a blender, and puree until smooth. Add more liquid as necessary to form a smooth sauce about the consitiency of ketchup. Pass sauce through a fine mesh strainer to remove any seeds and the tough skins; set aside.

  3. Cut the beef chuck into 1 to 2 inch chunks.

  4. Heat half the olive oil in a large pot or wok over medium heat. Saute onion until tender and translucent, about 5 minutes; set aside.

  5. Add the other half of the olive oil to the pot. Add beef chunks a few at a time, so as not to overcrowd the pot, and sear outside. Remove seared meat, and continue searing remaining meat.

  6. Put cooked meat and onions into a slow cooker. Add the pureed chile mixture, salt & pepper, diced fresh chiles and minced garlic, and chopped bell pepper. Use the reserved chile soaking liquid in place of water and add to barely cover meat, about 1.5 cups.

  7. Let simmer at least 3 hours. Add drained kidney beans for last half hour of cooking.
