Like a crustless quiche - very fatty, and delicious. I think it needs more chile and we could probably do something about the fat, but what. This makes a very nice appetizer, breakfast entree, or snack.

Recipe Ingredients for Chile Cheese Squares

1/2 c. butter
10 eggs
1 c. flour
1 tsp. baking powder
1/8 tsp. salt
8 oz. green chiles
1 pt. cottage cheese
1 lb monterey jack cheese

Recipe Directions for Chile Cheese Squares

  1. Preheat oven to 400 degrees F.

  2. Spray oil on 13x9x2" pan. Melt butter, set aside. Beat eggs slightly in large bowl. Add flour, baking powder and salt and blend. Add melted butter, chiles, cottage and jack cheese, and mix until just blended.

  3. Turn batter into pan and bake for 15 min. at 400, then reduce heat to 350 F and bake 35-40 minutes longer. Cut into squares and SERVE HOT.

  4. Can be made early and baked then or later, since it freezes and reheats nicely. One-half recipe bakes in 50 minutes in a 9x9" pan.
