Recipe Ingredients for Chile Cheese Rellenos Casserole (Better Homes & Gardens Cookbook)

8 oz peppers, banana
1/3 cup flour
1/4 cup milk
1 cup cheddar cheese
1 cup colby cheese
3 eggs
1/2 cup sour cream
4 tsp tabasco sauce
1/2 tsp baking powder

Recipe Directions for Chile Cheese Rellenos Casserole (Better Homes & Gardens Cookbook)

  1. Stem, Quarter and Seed the peppers

  2. Blanch peppers for 3 minutes in Boiling Water

  3. Mix eggs and milk and then add flour, baking powder, 1/4 tsp salt, and 1/4 tsp red pepper flakes if desired

  4. Grease a square baking dish and arrange prppers on bottom.

  5. Add cheese to cover peppers - reserving 1/2 cup.

  6. Pour egg mixture over peppers and cheese.

  7. Bake at 375F for 15 minutes.

  8. Take out of oven and sprinkle remaining cheese on top.

  9. Serve when cheese has melted with sour cream and Tabasco.
