Enhanced Chilaquiles, great for breakfast.

Recipe Ingredients for Chilaquiles

12 tortillas 6" White Corn Tortillas 12ct
14.5 oz Black Beans
14.5 oz Whole Kernel Corn
2 oz Fajitas Marinade Mix
14 oz Old El Paso Sauce Green Chile Enchilada Mild
14 oz Enchilada Sauce
12 oz Cheese
4 large Egg, White
14.5 oz Tomatoes
7 oz Green Chiles

Recipe Directions for Chilaquiles

  1. Drain beans and corn, place in mixing bowl.

  2. Add whole can of tomatoes, and whole can of chopped green chiles.

  3. Blend and add dry fajita mix.

  4. Tear tortillas, placing 1/2 in a layer on the bottom of a casserol. Top with half bean/corn mixuture, 2 beaten eggs, 1/2 cotija cheese.

  5. Repeat the layering.

  6. Top with each can of enchilada sauce.

  7. Cover with foil, bake at 350 degrees for 30 minutes. Remove foil, bake for an additional 30 minutes.
