Recipe Ingredients for Chilaquiles

7 1/4 oz canned diced tomatoes, fire roasted
3 cloves garlic, minced
1/4 onion, chopped
1/2 oz guajillo chiles, dried (3 whole)
2 cups chicken broth
0.62 kg boneless skinless chicken
21 oven baked tostadas
0.37 kg chihuahua cheese

Recipe Directions for Chilaquiles

  1. Chicken can be slow-cooked in a crock pot beforehand in broth. It must be pre-cooked before preparing this recipe.

  2. Salsa mixture: Place diced tomatoes, garlic, and onion in a blender. Take the chiles and open them up, remove the seeds and spines, and toast them in a skillet until they are fragrant. Add to the mixture in the blender and blend until mixture is smooth.

  3. Bring salsa mixture and chicken broth to a rolling boil. Turn off heat. Add tostada shells (broken up in pieces) or baked chips until they absorb the liquid a little. Add the pre-cooked, pre-heated chicken and cheese. Stir and allow cheese to melt. Serve immediately.
