A great way to use up dried out tortillas, either corn or flour or both. This recipe can be varied endlessly as a breakfast, snack, or main course.

Recipe Ingredients for Chilaquiles

2 corn tortillas
2 flour tortillas
1 tbs olive oil
1 medium onion, diced
60 grams
60 grams feta cheese
2 large eggs
3 tbs salsa

Recipe Directions for Chilaquiles

  1. Cut or tear tortillas into bite-sized pieces.

  2. heat oil in a frying pan.

  3. add tortillas and toss to coat.

  4. add diced onion and cook until tortillas begin to brown and soften.

  5. add cheese.

  6. beat eggs.

  7. add eggs to tortilla and onion mixture.

  8. toss lightly until mixed and set.

  9. Serve with salsa
