An easy dish that my grandma used to make for my mom and she used to make for me. Cheesy, yummy, and satisfying.

Recipe Ingredients for Chilaquiles

3 corn tortillas
2 eggs
1/4 yellow onion
1/2 tomato
2 oz low fat cheddar cheese
1 teaspoon canola oil
4 oz chicken breast

Recipe Directions for Chilaquiles

  1. cut corn tortillas in to strips, saute in the oil until lightly browned, not crispy

  2. add onion and jalapeno (if you want it spicy), saute

  3. add tomato and chicken

  4. top with cheese

  5. optional - serve with salsa
