With green sauce and shredded chicken

Recipe Ingredients for Chilaquiles - Green, Chicken

2 oz Cheese
0.5 oz Mexican Style Four Cheese
4 oz Chicken, Thigh, Meat Only
2 serving Corn De Miaz Blanco Tortillas
1 Teaspoon Juice
2 oz White Onion
1 tsp Sour Cream

Recipe Directions for Chilaquiles - Green, Chicken

  1. Boil chicken, then shred

  2. Cut tortilla into 1 inch strips and fry to light golden brown (overdo them and they don't soak up the sauce quite right), carefully toss out most of the frying oil (leave about 1 tbsp in pan)

  3. Lightly sautee the onions and add in the chicken for the final minute.

  4. Toss the chips with 3/4 of the cheese (reserve the rest for topping) and the chicken and onions.

  5. Top with sauce and microwave for 90 seconds (or toss in oven at 350 until the cheese melts).

  6. Squeeze lime juice, sprinkle reserve cheese, and dollop of sour cream and enjoy!
