Nutritious beans and veggies with canned enchilada sauce

Recipe Ingredients for Chilaquiles Casserole

1 tbsp oil
1 onion
2 zucchini
2 cups great northern beans, boiled
300 g corn
4 roma tomatoes
1 tsp cumin
1 tsp salt
12 whole wheat tortillas
15 oz enchilada sauce
1 1/2 cups shredded mozzarella

Recipe Directions for Chilaquiles Casserole

  1. Cook onion and zucchini in oil. Stir in beans, tomatoes, corn, cumin, and salt and cook until veggies are heated through.

  2. Scatter half the tortilla pieces in pan, top with some veggie mixture, repeat with another layer of tortillas, veggies, sauce and cheese.

  3. Bake for 25 minutes at 400 F.
