Marinated Chicken Kebab Recipe with Lemon and Basil

Recipe Ingredients for Chiken Shish Kebabs

1 cup of Lemon Juice
1/2 cup of Olive Oil
12 Fresh Basil Leaves
1/2 teaspoon Salt
1/2 teaspoon White Pepper
1 lb Chicken Breast Tenders Cut into Bite Sized Pieces
1 Pepper
2 small Yellow Squash
100 g Mushrooms
250 g Grape Tomatoes
1 Zucchini

Recipe Directions for Chiken Shish Kebabs

  1. Chicken Marinade Recipe Directions

  2. Rip the basil leaves by hand, tearing them into small pieces about the size of a dime

  3. Cover the pre-cut chicken with the ripped basil leaves

  4. Add the salt and pepper to the chicken and basil leaves

  5. Pour the lemon juice and olive oil over the seasoning and chicken

  6. Cover the container and shake well to mix and dissolve the seasoning

  7. Allow to marinate for a minimum of 20 minutes and up to 1 hour before assembly

  8. Makes 8 Kebabs Directions

  9. Soak wooden kebab skewers in a container of water for 15 minutes

  10. Chop the zucchini, summer squash and pepper into pieces the size of a silver dollar

  11. Assemble the shish kebabs by alternating one piece of chicken with a vegetable, mixing up the vegetables so that each skewer has at least one of each; larger skewers can contain more

  12. Place the finished kebabs on a broiler tray in the oven and broil on high for 10 minutes

  13. Turn the kebabs and continue broiling on high for an additional 5 ? 10 minutes, checking at 5 minutes for readiness

  14. Serve the kebabs with hot rice
