Korean crispy pancakes with kimchi. YUM! Suck on that Zizzy I can make my own now! Make 3 large meal-sized pancakes.

Recipe Ingredients for Chijimi

2 cups white all-purpose or cake flour
1 large egg, beaten
250 ml water
1/16 tsp salt
8 oz kimchi
2 cups kale, chopped
1/2 cup bean sprouts
1/2 cup carrot, julienned
1/2 cup sweet potato, julienned
1/2 cup chopped scallions
8 oz extra firm tofu, chopped
1 tbsp oil
1 tsp sesame oil

Recipe Directions for Chijimi

  1. Whisk together batter and allow to sit up to 30 minutes.

  2. Heat a large griddle and brush with oil and sesame oil.

  3. Working in batches, add 1/3 of veggies, kimchi, and tofu and pour batter over. Cook until set and crisp, and flip.

  4. Repeat and enjoy!
