This very low calorie pie filling will fill a deep dish pie. Meant to be topped with a fruit topping. It's a light and lovely filling for summer.

Recipe Ingredients for Chiffon Custard Pie Filling

1 serving Whey Low Granular Sugar
1 cup (not packed) Cottage Cheese, Lowfat, 2% Milkfat
3 extra large Organics Eggs Extra Large
6 tsp SPLENDA No Calorie
0.5 cup (8 fl oz) Yogurt, Plain, Low Fat, 12 Grams Protein Per 8 Ounce
1.5 envelope Gelatine

Recipe Directions for Chiffon Custard Pie Filling

  1. Dissolve 1 1/2 packets of gelatin into 1.5 cups boiling water. Set aside to cool.

  2. Separate eggs. Beat egg whites until peaks form.

  3. Beat 1/2 cup of gelatin mixture in a stainless bowl until frothy. Place in icewater bath and keep whipping until it cools (3 minutes or until mixture is cooler than room temp). Remove from icewater bath.

  4. Add egg whites to stainless bowl of whipped gelatin and whisk together. Set aside in refrigerator.

  5. Blend 3/4 gelatin water with cottage cheese, yogurt, vanilla, splenda, sugar until smooth. Let stand.

  6. Combine 1/4 gelatin water(remaining) with egg yolks and then whisk over double boiler until frothy. Set aside in fridge until room temp.

  7. Fold egg whites, whipped yolks, and cottage cheese mixture into one bowl, whisk until combined.

  8. Pour into pie crust.

  9. Chill for 2 hours or until set.
