Recipe Ingredients for Chickpeas, Tomato and Spinach Stew

1 tbsp olive oil
1 Onion, chopped
5 1/2 cups (800 g) Tomatos, chopped
1 liter chicken stock or Mineral water
3 1/3 cups (800 g) chick peas, cooked frozen
1 bunch (150 g) spinach, chopped
1 Salt
1 Pepper

Recipe Directions for Chickpeas, Tomato and Spinach Stew

  1. Heat the oil in a heavy pan, add the onion until soften.

  2. Add tomato, chicken stock and chickpea and bring to a boil. Cover and lower the temperature, cook on low heat for 15 minutes.

  3. Add the spinach, cook for 2 more minutes.
