Chickpeas with Escarole and Caramelized Onions

Recipe Ingredients for Chickpeas with Escarole and Caramelized onions

1 serving Escarole
1 oz Onions
1 tbsp Olive Oil
1 tbsp Butter
1 tsp Sugars, Granulated

Recipe Directions for Chickpeas with Escarole and Caramelized onions

  1. Wash and Dry eggplant

  2. Heat oil and butter in pan. Add the onions and cook stirring often on medium heat for 15 minutes. Add sugar then turn heat to low and cook until soft and brown.

  3. Add the escarole and cook until the leaves are tender and stems a bit crunchy. Salt and Pepper to taste

  4. Add freshly cooked chickpeas and a little of their cooking liquid and simmer until flavors have blended. Eat as is or serve over farro pasta
